Is it sinful to stand in respect for the national anthem of the country one lives in?

No, it is not sinful to stand when people of your country stand in respect of the country's national anthem. Muslim should always be a good citizen of his country and respect its rules and regulations which are not against Islamic rules.

Is the Nikah of a girl invalid if she marries without her father's permission to avoid committing a sin, even though her father did not approve of her marrying a pious non-Syed boy?

If her father prevented her from marrying a suitable believing man for no valid reason, his authority drops and she may marry without his permission. The father rejecting the boy for not 'being a sayed' isn't a valid reason. This practice is usually found in the indo-pak region and is due to Hindu caste system influence. All scholars permit marriage between sayed and non Sayeds.

No, it is not a sin to consume vegetarian food for any lawful reason. Those who claim that non vegetarian food is totally bad and don't consume it all, are doing sin because they denying Quranic verses to eat meat and the practices of the Prophet (SAWA) and his Ahlul Bayt (AS) who did eat meat.

Can I delay my prayer by 15-20 minutes if I have a longer Islamic session online, or would it be considered sinful to prioritize the session over performing the prayer at the designated time?

Performing the Prayer on the start of its time is highly recommended as believe from the actions of the Prophet (SAWA) and Ahlul Bayt (AS) that nothing can be more important than performing Salah on the start of its time. Even when they were fighting the enemies of Allah, they never postponed Salah.
