In regards to Quranic verses 55:19 and 20, it mentions the creation of two seas and a barrier preventing them from mixing. However, it has been scientifically proven that they mix in minuscule amounts. How can this be explained?

Mixing in minuscule amount is itself a miracle as huge pressure from water from both sides should make full mixing between the two seas, but Allah Created barrier preventing full mixing despite the huge amounts of water from both seas. This a living miracle witnessed and admitted by scientists. Such barrier between millions of tons of waters from two seas can never be created by human beings.

I have observed that in Surah Rahman verse 54 sometimes the text is written as وَجَنَا الْجَنَّتَيْنِ دَانٍۚ and sometimes it is expressed as وَجَنَى ٱلْجَنَّتَيْنِ دَانٍۢ. Is there any significance to this difference?

The right way is to write it as 
وجنى الجنتين دان
Because it is from Jana yajni not Yajno.

Authentic Hadeeths from the Prophet Muhammad (SAWA) explaining the meanings of Sura Al-Rahman; verses 19 to 22, مَرَجَ البَحرَين يَلتَقِيان (Allah Has created two seas which merge together) stated that the two seas are Ali and Fatima who merged and from them jewels came out who are Hasan and Husain. May I have some ideas on how to represent verse 6 of Sura Rahman to a child in a creative way?

I one saw someone teaching Surah al-Rahman by associating meaningful signs with each of the verses, so, for instance, in this verse, they pointed to stars and made trees with their hands and fingers. The idea behind this is that the human being will remember gestures and words more than gestures. You could try it!
