If the man has willingly forfeited the remaining time of the Mut'ah marriage, then it has ended. If you both want to continue together,you need to recite a new Mut'ah marriage contract with fresh time and Mahr.

If he was not willing to end the Mut'ah and said what he said in anger with out meaning it,the Mut'ah remain valid till the end of the time or deliberate termination of the Mut'ah from him.

As she is still a virgin, from a shar'i side, she would still need father's consent, unless she is completely socially and financially independent and free to make her own choices. 

Of course, whatever the case may be, morally, it is still very important to have family involved and seek the blessings of elders and approval when it comes to marriage.

If you have reasonable possibility that she is or might be from Ahlul Kitab, then yes, remembering that you need permission from your Muslim wife ( if any) for having Mut'ah marriage with a woman from Ahlul Kitab.

'If she does not belong to Ahlul Kitab, there is question of Mut'ah with her so never flirt with her because it is a sinful act which might lead to major sin.

If the required conditions were met at the time of the reciting of the contract, then it would be valid, and it is permissible for the female to wave her right to receive the agreed upon mahr. She is able to forfeit it after the contract, if she wants to.
