I know in Islam there is the belief that Allah does not have a beginning or an end. So does that mean he cannot die? But could he cause himself to not exist anymore or does this go against the nature of God?

Allah is The Everlasting Alive الحيّ ALHAYY and He never dies as He Created the life and death on all His creatures and He is above whatever He Created. 

We have no ability to know or even think about Him, but we should think about what He Created. The Hadeeth says: Don't think in Allah's Self but think in Allah's creatures.

What is the evidence to support the practice of praying Salat Wahshat for the deceased?

What we can see from our esteemed scholars is they refer to this prayer as "salat laylatul-dafn", the prayer of the night after burial, or "salat hadiyatul mayyit" prayer of a gift to the deceased, or "salat laylatul wahshah", prayer of the night of loneliness.

One narration for this prayer is: 

قال رسول الله (ص) لا يأتي على الميت أشد من أول ليلة فارحموا موتاكم بالصدقة فإن لم تجدوا فليصل أحدكم ركعتين: يقرأ في الأولى الحمد وآية الكرسي وفي الثانية الحمد والقدر عشرا فإذا سلم قال: “اللهم صل على محمد وآل محمد، وابعث ثوابهما إلى قبر فلان”. فإنه تعالى يبعث من ساعته ألف ملك إلى قبره مع كل ملك ثوب وحلة …

This is in al-Misbah, by al-Kaf'ami, p. 164.

Our Maraji' taqleed also consider this prayer to be mustahab as well.

Is it allowed for one to donate his organs for medical reasons after death?

Despite different opinions among big scholars in this matter based in the opinion on whether human body belongs to The Creator Allah or to the human beings himself, most of them say that it is allowed to donate organs after death for the sake of saving life of a human being.

If the risk is considerable, then it is not allowed to expose yourself or other human deigns to a risk of life.
