I have heard that Salman Al Farsi RA was over 300 years of age at the time he met Prophet Muhammad (S). However Wikipedia shows his birth in 568 AD. Is the report about his age being over 300 years authentic?

Yes. There are many narrations in our books about the age of Salamaan Al-Farisi. Mirza Husain Al-Nouri mentioned in his book; Nafas Al-Rahman Fi Fadha'il Salman, page 649 that Salman was traveling and searching for the last Prophet for four hundred years.

In some narrations that Salman met the Prophet Easa (AS) or his successor and remained till he met the Proohet Muhammad (SAWA).

Sayyed Al-Murtadha mentioned in his famous book, Al-Shaafi that Salaah lived 350 years. 
Majma' Al-Bahrain by al-Turaihi mentioned that Salmaan lived for 360 years.

Al-Seerah Al-Halabiyyah which is Sunni book mentioned that Salmaan lived two hundred and fifty years. Same was mentioned in Talkhees Al-Rijaal narrating from Tahtheeb Al-Asmaa'.
