I didn't do Sajda Sahw because I read it was only for when you add a Rakat or miss one, but what should I do if I read in the wrong position or say some lines wrong? Should I stop and redo my entire prayer over or is simply correcting it ok? Is Sajda Sahw necessary in this case?

Missing Ruku' invalidate Salah because Ruku' is one of the basic five obligatory acts of Salah. If you remembered and performed Ruku; before going for next step, then your Salah will be valid. If you go ahead to next Rak'at, before performing Ruku', then Salah is invalid because of missing one basic obligatory act.
