I have layered hair, and when I perform ablution, some hair remains behind my ears and gets in the way of wiping, despite my efforts to keep it out of the way, including tying it. Is my ablution still valid?

Wiping over the head does not mean over all your hair, but only over the hair or the skin of the front part of the head. If your wiping covers the hair or the skin of that front part of your head, then it is enough and you ablution is valid.
