I have come to think my prayers could be invalid since I added more water while wiping my feet, deviating from the correct method due to dry skin and my OCD. I regret this and have repented. Should I make up my prayers, or does my intention count?

Wiping over your head and on your feet must be only with the wetness of your hands while washing them in Wudhu. Adding any water on that wetness will invalidate the wiping then then Wudhu itself. If you are sure that you have added water more water, bthen your Wudhu is invalid. If you suffer from OCD and not sure whether you added more water or not, your doubt now does not invalidate your Wudhu unless you become sure that you did add more water for wiping.
