No, it does not invalidate your wudhu', as long as your hand was wiping the foot, and not the foot moving such that it wiped the hand.

When I wash my arms during Wudu, do I need to make sure every single part of my hand gets washed as well, or do I only need to wash my hands at the beginning?

It is mustahab to wash your hands before wudhu'. As for the wudhu' process, your hands must be washed as a part of your right arm and your left arm, including every part of your hand.

The hair extension should not cover any part of your skin otherwise it will prevent water from reaching to that part then your Wudhu will be invalid if water does not reach to all parts of Wudhu, and Ghusl will be invalid if water does not reach to every part of your head, face and body.

What is the recommended amount of water for performing Wudu? I often question the validity of my Wudu and end up repeating it several times, which harms my hair and skin. How can I ensure I am doing it correctly without causing damage?

The Hadeeth narrated from the Prophet Muhammad (SAWA) states: الوضوء بِمُدٍّ والغُسلُ بِصاع) Wudhu is with one Mudd (750 ml of water) and Ghusl is with one Saa' (3litres of water. Wasting water in Wudhu is not good and some Ulama said that it is Haraam.

If you repeat your Wudhu because repeated doubt, you must refrain from that and ignore the repeated doubts.

Sipping over your feet is part and parcel of Wudhu, which should be by your wet hand on your dry feet. Wiping over your feet does not need to make all your foot wet.

If a few drops of water fall on my feet while performing Wudhu, do I need to dry them before doing Masah? Will my Wudhu be invalid if I choose not to?

If you can perform Masah (wiping) on the dry area on your feet, then it is valid, but never do Masah on the water which falled on your feet. If the whole area is wet with that water,b then you need to dry it before performing Masah in it.

Having potentially performed Wudhu and obligatory Ghusls incorrectly over the years due to unrecognized barriers on my skin and improper techniques, do I need to redo all my past prayers?

You may contact your Marje' of Taqleed and write full details of the situation and the reasons, then wait for his reply.

If you are sure that your Wudhu or Ghusl were invalid for invalid reason, you will then need to redo your prayers.

As for Wudhu yes and you need to repeat it.
As for Ghusl also yes, but you may be able to make it valid very easily.
So if this dry part is in your left side of the body you can make it wet with the intention of Ghusl and this way your incomplete Ghusl will become complete and valid (The reason is in Ghusl, Muwaalaat i.e. "not creating distance between the components of a task" is not a condition for validity but in Wudhu it is!)
According to Sayyed Khamenei if this dry part is in your right side of the body you have to make it wet and also wash the left side as well because in his viewpoint, the sequence of head and neck then right then left side has to be observed according to obligatory precaution. same is with the head and neck i.e. if the dry part is in your head and neck you have to repeat on right and left part again.
According to Sayyed Sistani, if this dry part is in your right part of the body also you can make it wet with the intention of Ghusl and there is no need to wash the left part afterwards.
But if it's in head and neck then you need to wash the body afterwards.
