The name Zaid or Zayd is chosen by Imam Zainul Abideen for one of his sons. Zayd or Zayd Ibn Ali Ibn Al-Husain (AS) is the great grand father of Zaidi Sadat.
‘There is a name of Zaidan in Arabic which is from increase, but I did not find Zidan among the known Arabic names.

What is the total number of volumes in al-Kafi, and where can I access all of them in Arabic and English?

Kitab al-Kaafi was compiled by Al-Kulaini contains over sixteen thousand Hadeeths which more that all these leading narrations in Bukhari ,Muslim , Tirmithi, An-Nasaa’ee, ibn Maajah and Abu Dawood. The total number of narrations in all the six Sunni books of Hadeeth is around 6000 with out repeating.

al-Kaafi has Osool Al-Kaafi, then Foroo' Al-Kaafi then al-Rajdhani. The total number of volumes is 15 volumes depending on the publisher.

Yes it is permissible to write InshaAllah and Alhamdulillah in English and in any other language with out the necessity of writing it in Arabic.

Can the child of a Muslim, particularly a revert with a non-Arabic surname, have a Muslim first name but keep his father's non-Arabic surname?

Yes. It is allowed for Muslim to have a non Muslim surname or even name as far as it does not go against the faith of Islam. There are many pious Muslims who still carry a surname of their non Muslim grand fathers and it does not harm them at all.

New Muslim does not need to change his name or surname to a Muslim name or surname.

What is the Niyyah to be recited for the five prayers, Wudu, and the Ghusl after menstruation? Does the Niyyah have to be recited in Arabic or can it be in the mind?

Niyyah for every worship like Wudhu, Ghusl, Salah etc is the intention in our mind and heart and we do not need to recite it at all. It is not required to recite the Niyyah except in the worship of Hajj and Umrah where it is recommended not obligatory to recite the Niyyah in any language which you understand.

The Quran is in the Arabic language. If you want to have access its meaning then you would need to learn Arabic otherwise you would just be reading an interpretation of the Quran.

however it is not wajib to learn Arabic apart from what is necessary for acts of worship.

If you want to study and understand Islamic sources, you will need to understand Arabic to understand Quran and Hadeeth. You can join Hawza and start studying in English as beginner, then learn Arabic to continue. There are many Hawza classes in English and other languages but only for beginners who will definitely need to learn Arabic to go further in Islamic studies.

Do supplications like Dua Tawassul, Dua Kumayl, and others need to be recited in Arabic, or can they be recited in English as well? If I recite them in English, will I receive the same reward as when reciting them in Arabic?

Reciting the translation of the supplication is permissible. Reward depends on the state of our heart and the extend of sincerity and humbleness and reaction of the heart and mind with the supplication.
